Lay it out flat on a board and let it dry, I have hung it over a rope but don't like it bent in half when dried. Ed

I like to hang them like socks on a wash line, then let a fan work them over for a few days. It doesn't take long.

I've always laid them on wax paper, and rotated them occasionally. No matter the method, Rotate them. Even hanging them from a string, the area contacting the string will dry slower. The most important thing is location.......AWAY FROM DOGS!

Absolutely, dehydrators work great for drying sinew. Although it only works if it's yours, and not your wife's.

You'll know when the sinew is dry.   ;)   ...and you can use it green if you are ready to use it. You don't have to dry it...but if it's gonna be a wile go ahead and dry it.
