Knife Handle Finish

I have started making a few steel knives.

What would you guys recommend that I finish an Osage Handled Kitchen Knife with?

i use a wipe on minwax poly finish 6-8 coats for knife handles and have never had a problem
PRIMITIVE ARCHERY what other way can you play with sticks and rocks all day and not look like a little kid

The knives I use in the kitchen I rub in olive oil.

I was thinking of using Mineral Oil.
Never thought of Olive Oil.
May have to raid the Wife's Stash. ;D

On my food prep knives I use walnut oil, some say it will spoil along with olive oil, but I've never had a problem.
