Thought I'd do a pictorial recipe :o
Here is what I used. Adjust your
amounts to your taste :D

I like to wilt the vegies with a little beer
then add the oil and butter to sear the fish.

 I learned about throats down south fishing in the Gulf.
I haven't heard about them up here in Virginia or further north.
Eat more throats--  >:D They are delicious.

We always fight over the walleye cheeks. They look just like a scallop and have a similar texture. One of the best bites on the fish. I'll have to look into this throat thing.

Fish throats are new to me. Are they a boneless piece of flesh I have been discarding? That would be criminal.

Hope it helps. We also put the left over carcases in a big
barrel with water to make a slurry for the garden.
Keep a lid on the barrel. Can get a little stinky in the sun.

Wow, time out!! You mean to tell me I've been tossing out perfectly good pieces of meat from walleyes? The cheeks, I'll have to look for in the next fish, had no idea. I don't know about this throat thing, I'll have to check into that.
