I always start at the larger end.

I usually start at the smaller end.  I figure if I line it up there I have a little wiggle room at the large end if the split wonders a little.
I started out with nothin' and I still got most of it left

I like to split from the small end so I can get it in the middle, when I split from the wide end sometimes the small end gets uneven. If the wide end gets uneven I have more room to split or shave off some more.

I sometimes split from the middle of the stave. I try to find a grain line that is centered and drive an ax into it. From there a wedge either side and work out to the end.

Yep, split from the small end, your split won't wander off to the side as much as it will when you start from the big end.

Usually from both ends when the split starts to wonder, or even both ends and from the middle + lots of swearing,

Regardless of which end you start with, ALWAYS aim for the heart of the log. Split through the heart (I always start by placing a wedge/axe in the heart) and not beside it. Even if the heart is not in the geometrical centre of the log.
