Has anyone ever trimmed a hanger steak? It is a cut of meat that is probably the most flavorable but underutilized because it's a little difficult to trim and prepare. It is a cut near the chest of a cow right up next to the diaphragm. It comprised of two muscles separated by a thick piece of connective tissue that is around 8-12 inches long and 2 inches wide. You have to completely trim this from the meat so you cave 2 pieces of edible beef and the strip of tissue. You can't use the connective tissue in any cooking application but you may be able to use it as backing. I have thrown away thousands of them over the years. Anyone familiar with it? Think it could be used?

If it is sinew(tendons) it should work. If nothing else cook it down to hide glue.

Thought I would put it here since it was a question about backing. I was hoping to find out if anyone had used it. I also figured someone might fine the info useful if they were looking for a way to get backing free. Restaurants and butchers would probably just give it to you. If I use it can I splice several 12 inch pieces together along the length of the bow?

If it is indeed sinew I would dry it and separate it just like other sinews and stagger strands as you lay it on the bow just like regular sinew.

Ok sorry, I've only heard of back strap and leg sinew, but I suppose if you can get any more sinew out of an animal, wouldn't hurt to dry it out and see how it works.

Dry it and try it. I tried a piece of "neck tendon" and it shattered when I tried to shred it.

Im going to give it a shot. If it works I will kick myself for throwing so many away.

If it's the tissue I'm thinking about, I don't think it's sinew. It may offer a similar backing to rawhide however, but it won't be as durable. Definitely could be boiled with the bones, hide and other tidbits for making glue.

My vote would be hide glue as well. Probably great hide glue.

If it doesn't make glue it will make soup :D :D
