amazingly enough, the ashes don't stick to the meat side.. they come off surprisingly clean....however what I DIDN'T show was me accidentally grabbing a red coal that was stuck on the skin of the bigger cat which caused me to drop it right in the sand..had to take the garden hose to it after that  8)
