How picky do I need to be in the non bending areas of the bow? Is this tiny pin knot in the center of the handle an issue?

That is ok in the center of the handle but try to be super picky with wood choice. Anything over .60 sg is ok for the handle. You can also laminate thinner pieces together to get the thickness needed.

Ok so I got some perfect bamboo. The only issue is to get it perfect I had to take it down to 1/8th inch. Is that too thin for a core? Is it possible to double it up for a core? I do have some perfect grain hickory as a backup option if I need to. What's your advice? Will one of these still work or should I scrap both of them and try to find a different core to use?

Yes an 1/8th is too thin. You could glue a couple of lams together. Hickory would also work.
