Mark, DC, just to give you a bit of experimental input...
I made a rough draw knife from an ancient backsaw blade I had lying around. Mostly, it was just because I had never so much as held an angle grinder before, so I figured I'd rather not ruin a piece of good steel.
The epoxy cement holding the handles on is still curing, so I haven't used it intensely yet, but I did use a disc and belt sander to eyeball a single beveled edge onto it.
Thus far it seems to slice quite nicely into my ash stave that I'm preparing. It hasn't lost much sharpness and I've focused all cuts on a single area. When I get home from the office I'll give it a good thrashing and see how it holds up.
