Just looked at the recipe and it says 1/4 kosher salt - 1/4 what of kosher salt?  Pink Himalayan salt I can get.  Prague #1 I don't know!  The other stuff I got, now to find some wild meat!

Oops - it’s 1/4 cup Kosher salt.  I’m sure Himalayan would also work.  The Prague #1 is preservative.  I got a jar through Amazon for about 10 bucks, that’ll last me forever.

Look out, Bambi!  We'll be in new territory this fall!  Hopefully we can find a 2 deer area, and a couple friendly landowners!
