Hide glue question

I bought a "BIG" dog bone for the rawhide. When I soaked it and undid the knots I found what looks like ground up rawhide formed into a tube shape. I'm guessing it's a way to use scraps to fill the chew toy. Anyway, with it already ground up I thought it would be ideal for hide glue and I proceeded to make some. Seems OK but what I'm unsure of is whether this ground up rawhide was overly processed and maybe the glue won't be that great. Finally the question :) Is there a way to guesstimate the quality of homemade hide glue other than a bunch of testing like they did in TBB?

even if you purchase "the best"" hide glue from a wholly trustworthy source, it would be foolish in my mind to use it without a little test first.  Too much time and effort into these bows to jump in with an unknown glue.
