I am wondering if on .57 thick steel ( shovel head ) is a 60 degree bevel a good enough angle to mai tain a sharp edge and get sharp enough, or should I use a different angle for the bevel? Its a single bevel head 2" long 1" wide.

Somewhere between 25 deg to 35 deg I believe. If you are doing single bevel probably a bit steeper.

You can do a 23-25 degree bevel, and a micro bevel on that.
