Supper
« on: July 14, 2014, 11:56:59 am »
This was edible. :)

Rack of St. Louis spares dry-rubbed and slow-smoked with pecan, they came out perfect; new red taters partially cooked, guts scooped out and mixed with bacon, green onions, sour cream, butter, parmesan cheese and seasonings then stuffed back in the taters, put in the smoker for an hour or so; my wife made some fried green maters and garlic toast. I hurted myself.

Tonight, fired up the Akorn kamado again with some pecan smoke. Grilled pork chops marinated overnight in Cuban mojo sauce, grilled pineapple, grilled marinated asparagus, grilled garlic bread, and soupy taters. It was edible, :)

Some home-brewed Italian: Chicken breasts butterflied, pounded flat, and stuffed with Italian sausage, grape tomatoes, mozerella cheese, basil leaves, garlic, and seasonings; then slow smoke-grilled and finished with a lemon/butter sauce. Made-from scratch linguini noodles with homemade pesto and sauteed mushrooms, grilled garlic bread. Man, this was good!
