Made Meat - and a pie.

So I haven't been lurking on here as much as I used to.  New job has me working hellacious hours.  Plus I was so aggressively making bows I burned myself out.  Having a string of failures didn't help. 

I didn't touch anything bow related for weeks.  Then whipped up a 70lb bow for a friend.  Failure.  Trying a Torges patch for now but will probably need to remake.  In that time we took a family vacation to Russia.  Moscow to be exact.  Mother-in-law made a smoked fish pie out of something I'm not certain what the fish was.  That wasn't important.  I fell in love with it.  Honestly I've yet to get her crust right and am considering to to a traditional western crust but using her filling of layered smoked fish and caramelized onions with a drizzle of 2 beaten eggs, table spoon of sour cream,  teaspoon of flour, and a nice amount of chopped fresh dill.

As I was eating said pie with relish my wheels were turning about how I'd make this pie.  Weeks after we got back I finally got out the bow, a spool and a spare morning.  I went to my favorite haunt with the specific goal of doing this:







Enjoy.  This is how I eat carpish fish.  Buffalo and asian carp are my favorite.

Oh man, that looks pretty good!  Being of impoverished Norwegian descent, any form of fish looks good to me, not sure what that says. Good work, boss!

I gotta subscribe to Anthony Bourdain's theory that any culture that goes thru an extended period of extreme poverty and want will develop amazing food culture.  My codicil to that theory is that the food is likely to have the property of "sticking to your ribs", too!

what other fish is similar to carp in flavor? ive never eatn any.always herd "you cant eat carp" or the story about eating the board or the crap instead of the carp but im shure it probly isn't bad.great job by the way.

These are buffalo...they are awesome.  Carp are similar but have more red meat which I avoid.  Any rough fish can be shot and smoked to good effect.
