Beef backstrap

Is beef backstrap any good or is it what is referred to as neck tendon? I got some from a butcher and if it is any good there is a whack of sinew in it.

If its sinew it should be good. Probably quite long too.

I got some bison tendon from the butcher and thought I had the mother load but it had been from the neck. About 1/4" thick and maybe 1-2feet long but worthless for sinewing. When dried I actually snapped a piece in half and a chunk flew across the room. Not sure what a backstrap should look like but I wouldn't think it would be so thick.

On a good note, the dog loved it  ;)

If it is neck sinew, it really won't break down into fibers like leg sinew will.  Back sinew is more like a sheet.  And if it IS neck sinew, it will make good hide glue or like Doob-wah said, great dog chew!
