Wow.  I can never get mine anywhere to hang before it is stiff and the hide stuck on tight.

If you sharpen the living heck out of most any decent length knife and you should be golden to split the breast plate like that (I prefer to use a really sharp hatchet and just bust through in one swing usually if I'm lucky)
