Rick, When you cut the trees seal the ends of each log and split the logs in half and remove the bark. Some say it is not necessary to seal the backs of hickory staves but I do anyway for insurance. After a week or so split the halves into staves.
I like to use shellac to seal wood because if you want to remove it later it can easily be done without harming the wood. You do not want to seal the belly(split side) of the stave but leave it raw so moisture has somewhere to escape.
also, het that hickory off of the ground ASAP and to a protected area so it can dry evenly.
