I always grind my first then freeze, I put it in 10lb vacuum seal bags, I can flatten them out so they don't take up as much room and thaw fairly quick.

Man, you guys were cranking out some Brats! I still have a bunch of the brats I brought down in ten pound bags. I ran out of casing too. When I get some more casing I'm going to make some Boudin sausage. I've never tried making it with the rice added so we'll see how it goes.

That should be good Eddie, ya we had a good day, got about 130/140 to make this weekend and that will probably do it for the year, I try to get them all done in Jan. early Feb. I get really busy as the Classic starts closing in on me and don't seem to have time for much else.

Heading to the cabin in a little bit for a couple of days, got a few plans but with all the rain I will probable just hang around the fire and maybe got some shop projects done. Hope yall have a good one.
